







____________________________________________________ TASTING NOTES The 2005 Reserve Cabernet by Tapiz offers a deep red color with blue shades. Long tasting wine with a complex aroma of plum and black fruits, combined with vanilla. Full bodied and harmonious, it displays a balanced combination with the oak creating an intense and characteristic bouquet. ____________________________________________________ VINEYARDS Grapes used for the reserve are carefully selected from a single vineyard, situated in Tupungato, at 1300 meters above sea level, which brings about a greater complexity of aromas in this interesting wine. ______________________________________________________VINES & VINTAGE During this harvest year the climatic conditions were a great advantage for the red grapes during their maturing period. The phenolic maturity and the accumulation of sugar were growing at the same pace, enabeling us to harvest the grape with an optimum ripeness. _____________________________________________________ VINIFICATION Both harvest and selection of grapes are done by hand, allowing for only the best quality of fruit to be used for the Reserve Cabernet Sauvignon. A cold pre-maceration takes place at 8ºC for 5 days. Fermentated in stainless steel tanks for approximately 10 to 15 days at 25 -28ºC then rests on lees for 16 days. 100% malolactic fermentation done directly in new French (95%) and American (5%) oak barrels. The aromas are powerful with a combination of red fruit jam,black pepper and eucaliptus finished off with a touch of vanilla and chocolate. Complex and intense aroma of apples and peaches with a toasted vanilla flavor which adds to its complexity. ____________________________________________________ VINEYARDS Grapes are selected from a single vineyard, located in Tupungato (Valle de Uco) at 1.350 meters above sea level with the presence of sandy and aluvional soils. Drip irrigation comes from snowmelt of the mountains. The temperature range allows for an optimum development of the Chardonnay grapes. ______________________________________________________VINES & VINTAGE During the 05-06 period the temperatures were higher and for longer periods than usual. The average humidity was low and the summer rainfall was below normal, which led to a healthy grape and excellent ripeness. _____________________________________________________ VINIFICATION All fruit is hand-picked. This chardonnay is fermented and Aged on lees during 8 months in new French oak barrels . 100% malolactic fermentation in oak. _______________________________________________________ ANALYSIS Alcohol: 14.2 % Total acidity: 6 g/l. pH: 3.35 Residual sugar: 5.1 g/l. |

Aromas of red mature fruit with a marked presence of flowers combined with touches of vanilla and chocolate. Smooth and sweet in the mouthfeel with velvety tannins. Aged 14 months in new french and american oak barrels. ____________________________________________________ VINEYARDS The Grapes used for this reserve are carefully selected from the best vineyard areas in Mendoza, between 1050 and 1300 meters above sea level. The climate and soil give this wine special qualities which make it different from other traditional Malbecs. ______________________________________________________VINES & VINTAGE The main characteristics of this vintage were due to a dry spring with high temperatures and frecuent Zonda Winds. Therefore irrigation was increased to obtain the adequate growth of the shoots, in some cases it was not enough to obtain a full canopy. During this harvest at the end of March , the rains affected some of the varieties from the Eastern area of the Province, but in the higher areas ( like the Uco Valley) this favoured the vines and the harvest period was extended without affecting the sugar content. _____________________________________________________ VINIFICATION Both harvest and selection of grapes are done by hand, allowing for only the best quality of fruit to be used for the Reserve Malbec. A cold pre-maceration takes place (8ºC) for 5 days to extract color and aromas. Great concentration typical of the high altitude vineyards from Mendoza. An attractive palet of colours with a predominance in red and violet tints. Presents a velvety and rounded body with complex and concentrated nose of red berries, black current and plum ending with nuance of vanilla and chocolate.
